Triple Chocolate and Caramel muffins

1 3/4 c flour
1 tsp baking soda
1 c caster sugar
1/4 c cocoa
100 g butter
1 egg
1 c yoghurt (plain, like easiyo)
1/2 c milk
1/2 tsp vanilla
1/2 - 1 c choc chips
1/2 tin caramel condensed milk

Sift the drys into a large bowl. Melt the butter, add remaining ingredients (except caramel) and mix until smooth. Add the wets to the drys and fold together until the flour is dampened but not smooth.

Fill the muffin tins half full. Put a small tsp of caramel in the middle of each muffin. Use the remaining muffin mix and top up each muffin so you can't see the caramel. Put a few choc chips on the top of each muffin.

Bake at 200 for 12-15 minutes, or until centre springs back to touch. Leave to stand for 5 minutes before removing from tin and cool on a wire rack

Makes 12 generous muffins

NOTE: The remaining half tin of caramel makes a great caramel sauce. Put it in a bowl with about 1/2 c milk. Whisk until smooth then microwave for 1-2 minutes. SOOO yummy.
