Cheaters cheesecake

Make jelly before you start base, see Filling instructions.

1 pk plain biscuits - crushed (arrowroot or roundwines are good)
150 g butter - melted
1 tsp cinnamon
1 tsp ginger

Crush bikkies, add butter and spice. Mix well and press into round dish. Set in fridge

1 pk lemon jelly
1 c boiling water
2 Tbsp lemon juice
250 g tub cream cheese - not diet, needs to be full fat to set
1/2 c sugar
300 mls cream
1 tsp vanilla essence

Dissolve jelly in boiling water and add the juice. Allow to cool, BUT NOT SET **. Beat cream cheese adn sugar until smooth. Beat cream and vanilla until thick. Once jelly is cool (dip finger in), mix cream, cheese and jelly until smooth. Pour onto biscuit base and set in the fridge.

Makes about 12-16 decent slices. Can also be frozen AFTER it is set, can be eaten frozen too, if you just can't wait. Shelf life is the same as the cream that was used in it.

**Leave on the bench, don't put in the fridge, freexer or in a sink of cold water. Geletine sets in bottom of bowl and cheesecake won't set.
