This recipe was orginally from a Little Treasures magazines  six or so years ago. They are the easiest muffins/cup cakes I've ever made. Even a person that can't cook would be able to make these 

what I do with mine is ice with the glace icing then dip it into a bowl of mini M & M s !

1 and  1/2 cups of self-raising flour
pinch of salt
100 grams of soft butter
1/2 cup of sugar
2 large eggs
1 dessertspoon of lemon juice
grated zest of lemon
dash of milk

Heat the oven on 190 deg. celcius

Line the mini muffin pans with paper patty cases (or grease your pans well)

Combine all thei ngredients into a bowl and beat until absolutely smooth , about 1-2 minutes.

Spoon the mixture into the prepared pans and bake for 15-20 minutes or until well risen and golden.

Ice and decorate as desired.

Glace Icing :

1 cup of icing sugar
add a squeeze of lemon juice or a drop of artificail colour and flavour such as raspberry or pepermint. (I've tried both and the raspberry is the nicest)

Mix to a spreadable consistency, adding a drop or two of water if required.

*These look really great decorated with a small lollie or mini m&ms on top. Always go down a treat at childrens parties *
