Makes about 20. Prep time-30 mins Chilling time- 1 and 1/4 hours

250 grams plain biscuits - broken into small pieces (food processor works well)
1/2 cup of desiccated coconut
1/2 cup of caster sugar
1/2 cup of pecan nuts (chopped)
1/4 cup of cocoa powder
100 grams of dark chocolate (chopped)
100 grams of butter
1 TBSP of golden syrup
1 egg - lightly beaten

CHOCOLATE TOPPING:
200 grams of dark chocolate (chopped)
50 grams of unsalted butter (chopped)

1. Lightly grease an 18 x 28 CM slice pan. Line base and two long sides with baking paper,extending paper 2CM above pan edge.

2. In a large bowl, combine biscuits, coconut, sugar, nuts and cocoa.

3.In a small saucepan, stir chocolate, butter and syrup together over a low heat for 4-5 minutes until mixture is melted and well combined. Cool slightly. Add egg. Blend mixture into dry ingredients.

4.Press mixture firmly into prepared pan using a fork. Chill for 30 minutes until firm.

5.CHOCOLATE TOPPING- Melt chocolate and butter in a heatproof bowl over a saucepan simmering water. Spread over chilled slice.Chill for 45 minutes until set.

6. Using a hot knife, cut slab into squares. Store chilled in an airtight container.
