Serves 8 Time Required- 45 minutes

1 cup of gluten-free self-raising flour
1/3 cup of rice flour
60g reduced-fat margarine
1 cup of caster sugar
1 egg-lightly beaten
1/2 cup canned pie aplles
1/2 cup of skim or soy milk
2 granny smith apples-sliced
cinnamon sugar to dust
apple gel, to serve

1. Preheat oven to 180C. Grease a 20CM-round cake pan, line base with baking paper.

2. Sift flours together, set aside. Using electric beaters, mix margarine and sugar until light and creamy. Stir in beaten egg and canned pie apples. Fold in sifted flours alternately with milk.

3. Spoon into pan and level surface. Top with sliced apple, dust with cinnamon sugar. Bake for 30 minutes or until cooked, brush with gel to serve.
