Prep time- 15 mins Cooking time-50 mins

150 g of unsalted butter- at room temp
3/4 cup of caster sugar
5 tsp of finely grated Lemon rind
2 eggs
1 and 1/2 cups of self-raising flour
2/3 cup of sour cream
shredded lemon rind (to decorate)

Lemon Icing
2 cups of icing sugar
2 tsp of melted butter
1 and 1/2 - 2 TBsp of lemon juice

1. Lightly grease a 20CM round cake pan. Line base with baking paper.

2. Beat butter,sugar and rind in a small bowl with an electric mixer until light and fluffy. Beat in the eggs, one at a time until combined. Fold in the flour and sour cream until combined. Spoon mixture into prepared pan.

3. Cook in a moderate oven(180C) for 50 minutes or until a skewer comes out clean when inserted into centre of cake. Stand cake in pan for 5 mins before turning out onto wire rack to cool.

4. To make lemon icing, combine icing sugar, butter and juice in a bowl. Stir in enough lemon juice to give a pouring consistency.

5. Pour icing over cold cake.Decorate with shredded lemon rind.


6. serve cake cut into wedges.

*tip*
For a change, instead of making lemon icing serve cake warm and dust with sifted icing sugar.
