Makes 18 Prep time- 10 mins Cooking time - 30 mins

1 cup of vanilla yoghurt
1 cup of caster sugar
125g of unsalted butter - melted
2 eggs
2 and 1/2 cups of self-raising flour
500g of frozen mixed berries
icing sugar to decorate

1. Line 18 holes of a 2x12-hole muffin pans (1/3 cup capacity) with paper cases.

2. Place yoghurt,sugar,butter and eggs in a bowl.  Stir until combined. Add flour and frozen berries to mixture and stir again until just combined. Divide mixture evenly among paper cases.

3. Cook in a moderate oven (180C) for 25-30 minutes or until cakes are cooked when tested. Stand in pans for 5 mins before transferring to a wire rack to cool.

4. Serve cakes dusted with sifted icing sugar.

*tip*
Cakes can be made up to two days ahead and stored in an airtight container. Cakes can also be frozen for up to one month.
