Prep time- 30 mins Cook time-25 mins Makes 8

Golden syrup can be used instead of treacle. This mixture can also be cooked in a large loaf pan- bake for 45-50 mins .

100g of butter -at room temp
2/3 cup of caster sugar
1/3 cup of treacle (or golden syrup)
1 egg
1 and 1/2 cups of plain flour
3 Tsp ground ginger
1 and 1/2 tsp mixed spice
1/2 tsp of baking soda
1/3 cup of milk
strips of orange rind to garnish.(optional)

Orange Icing
1 and 1/2 cups of icing sugar
2 TBsp of orange juice
20g of butter- at room temp
finely grated orange rind of 1 orange

1. Preheat the oven to 180C or 160C fan bake .
Grease an 8 hole petite loaf pan (or just use a large loaf pan and extend the cooking time -see tip above)

2. Beat butter, sugar and treacle (or golden syrup) in a medium bowl with an electric mixer until light and fluffy, beat in egg.

3.Sift dry ingredients together, fold into creamed mixture alternately with milk. Spoon evenly among pan holes .

4. Bake for 20-25 mins (or if in large pan 45-50 mins) or until cooked when tested. Cool in pan for 5 mins. Transfer onto a wire rack to cool.

5. Meanwhile, make orange icing;spread over cold loaves. Top with orange rind strips.

Orange Icing
Sift icing sugar into a heat-proof bowl; stir in juice,butter and rind until smooth. Place over a saucepan of simmering water and stir until mixture is of a spreadable consistency.
