Serves 6 Time required- 55 Minutes

5 potatoes - cut into 1CM-thick slices
1 cup of chopped bacon pieces
2 cups of grated cheese
1 onion - finely chopped
1 tomato - chopped
1 and 1/2 cups of cooked spiral pasta
40g of butter
1/4 cup of plain flour
2 and 1/4 cups of milk
1/2 TSp of nutmeg
1/2 TSp of dried basil leaves
seasonal greens to serve

Preheat oven to a moderate 180C.

Lightly grease a large Lasagne-style dish, about 20x30x5CM deep.

Cook the potato until just tender, drain well. Place in the prepared dish.

Top with bacon, half the cheese and the onion, tomato and cooked pasta.

Heat the butter in a pan, add the flour and mix until combined. Cook until bubbling. Remove from heat and gradually stir in the milk. Stir over medium heat until mixture is thick and smooth. Add the nutmeg and basil.

pour sauce over other ingredients in the dish and top with remianing cheese. Bake for 20 minutes or until golden brown. Serve with seasonal greens.
