serves 4 Time required - 20 minutes

500g pkt of short-cut angel hair pasta

250g pkt of frozen spinach- thawed

1 large onion -finely chopped

6 slices of bacon -chopped

575g Jar of Tomato pasta sauce

Parmesan Shaves and crusty bread to serve

1. Bring a large pan of water to the boil. Add the pasta, stir well and cook uncovered for 6 minutes. Drain well and set aside.

2. Squeeze the excess moisture from teh spinach. Cook onion and bacon in a large frypan over medium heat for 2 mins , until onion is soft. Add spinach, cook for a further 2 mins.

3. Stir through cooked pasta and sauce and warm for 2-3 mins, stirring often. Serve with parmesan and crusty bread.
