Start cooking nibbles in a roasting pan with cooking paper under them cook till there is a bit of liquid in the pan and drain the watery juice off.

then brush with the marinade

4 cloves of garlic
a thimb size nob of ginger peeled and finely grated
1 tbls chilli sauce
1 tbls oyster sauce
1 tbls spoon tamari
and as much brown sugar to make a fairly thick paste

add more or less of each ingredient depending on ammount being cooked.

brush all over the nibbles and slowly bake them
turning and recoating with the marinade till its all used
and nibbles very well covered.

i like to cook them for about 3/4 of an hour some regular bake some fan bake as it makes the sugar
cook enough that it ends up like toffee.

really yummy hot
but cold the nibbles crunch with the sugar and are a bit like crispy toffee apple toffee.

hope you try them and enjoy.

if i dont have oyster sauce i will substitute with plum or even barkers spicy apricot it doesnt
mater it all marries up nicely with the garlic and ginger.
