okay... I got mushrooms coming out my ears  eek ... no!!!, but in one day I have already picked a bucketful,  and theres heaps more to come....

anybody got some good mushroom recipes???

will be having mushrooms and bacon for brekkie...

Mushroom Soup is great, but can you freeze it if it has cream/milk in it?????

I make this quiet often it's great when you don't feel like meat
Mushroom Risotto
Ingredients
25g butter
1 onion, peeled and finely chopped
2 tsp minced garlic
2 cups Sunrice Arborio Mediterranean Rice
1 cup dry white wine
3 1/2 cups chicken stock
420g can Wattie's Condensed Creamy Mushroom Soup
1/2 cup grated parmesan cheese
1/4 cup cream (optional)
salt and pepper to season

   

Method

1. Heat the butter in a large saucepan and add the onion and cook over a moderately low heat for 3-5 minutes until very soft but not coloured. Add the garlic and cook a further minute.

2. Add the Sunrice Arborio Mediterranean Rice and cook one minute until the rice begins to whiten.

3. Add the wine and stir constantly over a moderately low heat until the rice has absorbed all the wine. Add the chicken stock to the risotto 1/2 cup at a time, stirring continuously. When each amount has been absorbed add the next measure.

4. When all the stock has been added, stir in the Wattie's Condensed Creamy Mushroom Soup and continue to cook over a low heat until thick and creamy. Add the Parmesan cheese and optional cream and season with salt and pepper.

Serve as is in bowls garnished with extra Parmesan cheese or on top of grilled mushrooms garnished with crispy bacon rashers and chopped parsley.

got some recipes that use heaps of mushrooms?  do ya reckon I could freeze cream of mushroom soup????

I can't see why you couldn't freeze it ...how about good old fried mushrooms slice them up cook them in butter or olive oil and a bit of crushed garlic  , salt and pepper sprinkle with parsley on serve on toasted sour dough bread ....yummy

yep... loads will be had for breakfast every morning too.

I do a good garlic mushroom recipe that is done in the microwave.

I just thought that with creamy soups, the milk curdles when you defrost...  or somethink eek

possibly not, when i was a kid my dad owned a milkrun we froze milk and cream all the time, alltho it hadnt been cooked first... guess you could try with a little bit and see..

many years ago on this place the mushrooms were sold in box loads at the shop in town.   eek

yeah spanky we freeze milk when we dry the cows off and its ok....

damn good idea dot, but not many cars come down our road....  generally its only the peeps who live on it...

Like - we all look at a car if it goes past and we cant recognise it  eek 

Roadside stall in town tho is I spose what u meant anyways.....

what about pickling them?

tho button ones are probably better for that

ya can make mushroom sauce - like tomato etc

oh cat....

Digby Law's book is my absolute bible...  well back in the days that I bottled, sauced, preserved and chutneyed everything...

The Peach Chutney is something to die for!!!

When I moved up to the farm, I was pregnant with my second son...  I ordered in a truck load of peaches thru my work and sold cartons to people, then with the rest I made 2 years worth of Peach Chutney!!!!!

I thought I had lost my Digby Law book, they dont reprint it now either.  I once looked for another copy on TMe and it was selling for about $80..  Thank god I found it... eek

i'm gonna go searching tm for another one then
bugger i should have bought it over with me 

so many of my old cookbooks and books i left behind

when we move we are putting in a 'scullery' and i am going
to start bottling again
things will keep better as i will be a 'chilled' room

Digby Law has a recipe for Mushroom Ketchup...  Needs 1 kg of Flat mushrooms - easy 

Makes 1 litre...

Cool! So I will just keep making it with my mushies....  For some weird reason even tho I havent been bottling, I just cant for the life of me get rid of excess bottles.....    Closet hoarder... eek   Even gave some to my mum the other day... coz she didnt haven any....  And of, course, they came back filled with Raspberry Jam...

PS Have done the pickled Mushroom one before, didnt like it, was to pickledy tasting and not enuf mushroom flavour...
