As a result of my lovely weekend away I am now in possession of some wild venison NOT farmed - yum!!!  I have back straps, casserole, mince, sausages,  and patties.  I'm desperate for some good basic recipes please    Given the more gamey flavour of the mince, would it be okay to use it in normal beef mince recipes?  I'm no Nigella in the kitchen, and most certainly not Gordon either     so all advice and recipes gratefully received.
