Shadow- my favourite thing to make in the slow cooker is lamb shanks, or beef stew, or chicken and rice or....

So.
Lamb Shanks.

First you need some stock, at least 5 cups. I make my own(easy and inexpensive) but store bought works too.

Take your lamb shanks, I assume 2 per person and one more for luck for 2 people. So if having 4 people make 6. Trim away the membrane, and if unuasually fatty take some of the fat off. Put in crock pot.

Pour stock (I use vegetable) into slow cooker. Add some rosemary, a sprig or 3, garlic (at least two cloves sliced), and a peeled onion cut into quarters. If half a dozen  or so pepper corns make it into the slow cooker all the better

Put on low and leave for 3 hours. Add sliced carrots about as thick as your ring finger for women, your pinky for men. Cook for 6 more hours. Pull three cups of the liquird out and make a gray using a roux.

Make mashed potatoes and steamed brocolli.

Place various size helpings of each dish on a plate.

Serve!
