basically this is the Indian fresh cheese paneer and it's so easy to make...

whole milk (you want full cream and not homogenised) the amount doesn't matter

lemons (enough for half a cup of lemon juice) per litre or so of milk

bring milk to scalding hot and add lemon juice.

this separates the curds from the whey

strain off liquid and drain through a sieve lined with a clean new kitchen washcloth (one of those thin blue and white ones)

press curds into shape and pop a weight on top ( a heavy plate or some such)



now for the good bit:

cut the pressed curd into blocks (best if they've drained and been chilled over night but it still works if you've just made the paneer)

pop a dash of oil on a flat tray and brush blocks of paneer with oil so they're coated lightly

place under grill until golden and crisp (you'll have to turn them to get each side)


serve with fresh steamed rice and a fragrant mix of lightly sauteed onion, canned tomatoes and frozen peas cooked lightly with turmeric...


so delicious and moreish  eek

it's good JJ, my aunty makes this and she pan fries the paneer and then adds the peas and tomatoes mixture and simmers them together for a bit...

but I like the crispy paneer to stay crispy on the outside and all delicate and soft on the inside... soooooooooooo good...
