haha yeap, final part done and now in oven for another 30mins

smells insane


They were all going make something for us....your last day etc.  I am like, but you need to get me a cake and present.   eek   

I am going back on Friday avo for drinks and many of the ladies have got a night pass.  Oh dear, watch out Newmarket.

Did you use the Varlhona cocoa or normal cocoa?  and if you used Varlhona cocoa where did you get it from?

Cool.....I just googled Varlhona cocoa and it is expensive there is a place in Mt Eden you can get it it is $17.50 for a 250g bag and about $45-55 for a 1kg bag

Yikes to that. 

It is expensive enough to make with 500grams of cream cheese just for one section so no way would I get that cocoa as well.

My mum had a similar recipe that was really rich.
It was naenome bar( not sure of the exact spelling) and had a chocolate biscuit base, a thick filling of custard/icing and was topped off with melted chocolate......delicious.

it was an uncooked one and so rich that you could only eat little bits at a time.

Mmmmmmmmm Nanimo Bars
A great Canadian Treat!!!



Ingredients:

***Bottom Layer ***

    * 1/2 cup unsalted butter
    * 1/4 cup sugar
    * 5 tablespoons cocoa
    * 1 egg beaten
    * 1 1/4 cup graham wafer crumbs
    * 1/2 cup finely chopped almonds
    * 1 cup coconut

***Second Layer ****

    * 1/2 cup unsalted butter
    * 2 tablespoons cream PLUS
    * 2 teaspoons cream
    * 2 tablespoons vanilla custard powder
    * 2 cups icing sugar

***Third Layer ***

    * 4 squares semi-sweet chocolate (1 oz. each)
    * 2 tablespoons unsalted butter

Directions:

Bottom Layer

Melt first 3 ingredients in top of double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, coconut, and nuts. Press firmly into an ungreased 8" x 8" pan.

Second Layer

Cream butter, cream, custard powder, and icing sugar together well. Beat until light. Spread over bottom layer.

Third Layer

Melt chocolate and butter overlow heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.

Cut into 24

that's the one except I use chocolate wheaten in the base
