grate the cheese and melt it with a little boiling water.
a little mustard and heaps of finely diced onions.

Yes start with cheese I use a whole kilo block

2 good sized onions I like to grate them so they are mushy

mix cheese and onion together
With a good long knife with a flat paddle blade spread a good amount
so that it is thick on the bread and roll up.

I like them so they are a full round, but had some today at the hospital cafe where they rolled them on the angle.

If you get what I mean.

If you dont like tom sauce you can do all the same above except that and add 1Tbl of black sauce a teaspoon of mustsrd powder

and a splash of vinegar.

Ive worked in a few cafe and thats been our recipies.

My own personal prefrence is for the squashed flat variety,

but most places now have grill type ones that dont squash them.

I like them buttered and spread with some picklilli or chow chow.

There really isnt one rule of the cheese roll just as long as there is cheese in it and you roll it.....

Fine chopped onion or onion soup are the most common
