1.5kg (3lb) tomatoes
500gm (1lb) apples (I used granny smith)
1tbsp grated lemon rind
1/3 cup lemon juice
1.25kg (21/2lb) sugar


Skin tomatoes & cut into thin slices.
Peel, core & thinly slice apples.


Place tomatoes, apples & lemon rind into large saucepan.
Cover, bring to boil, reduce heat, simmer for 30mins.

Put sugar into baking dish, then into moderate oven for 7mins.

Add sugar & lemon juice to tomato mixture - stir till sugar dissolves.

Bring to boil - boil for approx. 40-45mins (stirring occasionally) or till jam jells when tested on cold saucer.

Pour into hot sterilised jars & seal.

Makes approx. 1.5 litres.


Evaluation:
Found that this jam sets well, is sweet and has a nice faint lemon aftertaste, but don't expect any of the strong fruit taste of the commercial jams.

I've never made it till now, so would be interested in feed back re: taste in particular.

I can't wait to try this in the Autumn!

I have lots of tomato seeds to grow, and of course with 35 apple trees, finding an apple or two shouldn't be a problem

Will let you know how it goes

Or might head off to Huckleberries to get some organic produce to try this...
