Should I do that while I'm doing all the other security wiring and whatnot on the renovation nightmare?

yes.
If fiber comes past the house in the future it would be an advantage. Wireless is OK, everybody has a wireless router these days, but wireless is slow. If you want to stream movies and stuff having a wired connection will give you the speed and bandwidth needed. Make sure you run a network point to the TV location too. You don't need a lot of points.

Wireless is fast enough, we stream HD movies from iTunes over our wireless router and there's no drop in speed for any other wireless devices around the house, you could probably stream a couple of movies over it but why would you need to stream more than one anyway?  Wireless is getting faster too

I reckon the 24 outlet one would be ok

It's only a small 3 bedroom place, even if I put wires out to the new garage/studio

Gigabit wireless isn't commonplace yet, and still expensive compared to a cheap cable run. There is only limited bandwidth for wireless signals, so when you get a  few wireless modems in the same area performance can suffer, so in the future when everyone is wireless the wired system will still be operating at full speed.

plus the little snot heads next door can't hack your wi-fi if you don't have it

low risk IMO and it's pretty easy to spot anyway so you just need to change the password.  We have a single wireless router, and a search for any in range returns about 10 so it's fairly busy in this area.  We have 2 iPads, 2 Laptops, an iPod, 2 smartphones, Apple TV all via wireless and 3 wired PC's as well running off the router and it handles it no sweat, we got a HD movie on Apple TV last night which was streamed but it still downloads it while you're watching and they download in about 1/4 the playing time with all those other devices connected as well - if Weevil is running an Internet Cafe or Data Centre sure get the house wired up, otherwise it's just a luxury
