Chocolate Rough:

4 oz butter, melted  (oh hang on, that would be 125gms  )
Add 1/2 cup sugar
1tsp Baking powder
3/4 cup coconut
1 cup of flour
1 Desert spoon of cocoa.

Mix.

Bake slowly in a shallow tin, ice while hot (and cut while hot too or you wont be able to get a knife through it)

Icing: 1 oz melted butter, 3/4 cup coconut, 1 cup of icing sugar 2 tsp cocoa,  a drop or two of vanilla ess (and a bit of milk of needed)

hmmm you'll need more than 'bake slowly'  (told you these are old - the didn't have temp guages)  go for 1/2 at 160 degrees C - you 'll be sweet.

Date and nut loaf

Put 1 cup of dates, (choped up a bit)
1 tsp baking Soda,
sml cup of sugar,
1 tbsp (25 gms) butter

Pour 1 cup of boiling water over the lot.
Beat until creamy.
Mix in 2 cups of flour, 1tsp baking powder and
1/2 chopped nuts

Bake 1 hour in a moderate (try 180 degrees) oven.
Put it in a loaf tim, when cool you slice it like bread and butter it.  the kids wont know what to make of it but it really is nice.

Chunks

Melt 6 oz butter       & 1 Tbsp of golden Syrup together, then pour over:

1 cup of flour ,             1 tsp Baking powder
1 Tbsp cocoa               1 cup of sugar
1 cup of coconuts        2 cups of rolled oats
1/2 tsp vanilla             a sml hand ful of sultanas (or raisins)

Mix.

Press into a shallow tin, cook in a moderate oven for about 15 minutes

Cut into squares while hot.

short bread:

250 gms Butter
125 gms caster sugar
400 gms flour and a pinch of salt.

Cream butter and sugar till creamy (can't be lazy with this one, you really need to do it well)
Add flour & salt & mix till well blended.

(I usually roll the mixture then slice off) Grandma: Place on greased tray, pat out to desired shape, cut, prick and Bake 35 - 40 mins in a moderate oven again.

Chocolate Cake:


2 oz (about 50 gms) Butter
1 cup of sugar,
2 tsp golden syrup
2 tsp Vinegar,
2 cups of Flour
1 tbsp cocoa
1 1/2 tsp baking powder
1 1/2 cups of milk
1 tsp soda


Cream butter and sugar, add golden syrup and vinegar.  Sift in flour, cocoa & baking powder.  Dissolve soad in milk and add last.

Turn into a prepared tin and bake 1 hour in a moderate oven.

Chocolate Weetbix cake:

175 gms butter (melted)
1 cup brown sugar
1 cup flour
3 crushed weetbix
1 tbsp cocoa
1 tsp baking powder
2 tbsp coconut
a few drops of Vanilla ess.

Mix the dry ingredients and add the melted butter, mix.

Press in to a tray, cook slowly 150 degrees C for 30 mins

Ice and Cut while hot.

Used an eggless choc cake recipe for years...this one was done in a pot...was the kids favourite...then they learned to make it themselves
