CARAMEL ICING

2 cups Icing Sugar
2 tablespoons hot water
1 tablespoon Golden Syrup
1 tablespoon Soft Brown Sugar
1/2 teaspoon vanilla essence

Sift icing sugar into bowl
Mix water and golden syrup together
Add to icing sugar with brown sugar and vanilla essence
and mix to form a smooth, spreadable icing.



Goes nicely with Date and Walnut Cake

orange icing.

grate the skin of an orange on the very fine grating side.
squeese orange juice into a bowl.

In a seperate bowl put about a cup of icing sugar and add the grated skin.
slowly add orange juice as it doesnt take much to make it to wet.

very yummy.

Chocolate cream icing.
In a bowl slowly melt a large block of choc.
Ive used black forest, caramel, peppermint, country fudge, or energy.
while slowly melting to liquid in an other bowl whipp a large bottle 500ml cream
till quite stiff.
add melted choicolate and mix well.

put over the top of sponge and spead evenly

refriderate till it sets firm.

chocolate icing.

Im a pot put a kingsize block of chocolate broken into pieces.

add about half a cup of runny cream and slowly heat

stirring as you go to avoid sticking when its all melted and combined
let cool a little till it is thickening and then ice cake.

I also use this on top of a pavlova spead over and then refridgerate till set.

then cover with whipped cram and fruit.

when doing this for a pav i will often add some liquure to the choc mix

choc liqure baileys, contrue(sp)
only limit is your imagination..


same mix can be left till really cold and make into balls, if i do this i add sultanas or prunes soaked in rum.
roll in cocoa or coconut or even dip just in more melted choc.

its a versatile mix...

it is so yummy.... I must say it can look a bit curdled as the chocolate is added but when it sets it is fine...


and it is so yummy to eat not even on the cake.
