Pinenut and Thyme Stuffed Chicken Breast Salad

4 skinless chicken breasts
8 rashers bacon
runny honey
salad greens
cherry tomatoes
lite french dressing

Stuffing
250g cottage cheese
1/2 cup breadcrumbs
1/2 cup toasted pinenuts
1tbsp chooped thyme
2 tsps grated lemon zext
salt and pepper to season


Combine stuffing ingredients and mix well.  Place chicken between glad wrap and pound until 6mm thick.

Half cover chicken with stuffing and fold over.  Wrap chicken in bacon rashers.   Drizzle with honey, bake 180c for 25-30min. Grill for 3-5min to crisp up bacon if needed.

Slice then add to salad.  Dress with light french dressing

Penne Pasta Salad with Prawns or Chicken


Dressing
1tbsp dijon mustard
2 tsp lemon juice
1 tbsp tomato puree
1 tbsp thousand island dressing
few drops tobasco sauce
salt and pepper

mix all ingredients together in large bowl

1/4 cucumber
2 tomatoes

cut into bite size pieces and add to dressing with 115g of cooked penne pasta and 100g of cooked chicken or prawns

finish off with 1 tbsp of chives

Chilli BBQ patties

2 cloves garlic, crushed
1 onion, diced
1/4 cup sweet chilli sauce (i find the watties bit on the side best for this because its not too sweet)
1/2 tsp salt
1/4 tsp chilli powder
250g sausage meat
1 cup breadcrumbs
1/4 cup chopped parsley

mix all ingredients thoroughly and shape into 6 patties.  fry on BBQ.

Scallop and prawn kebabs

350g scallops
350g rindless bacon
1 kg medium prawns (uncooked, but peeled and deveined)

Wrap scallops in bacon and push onto skewers alternatively with the prawns.

Brush with 2 tbsp of teriyaki marinade mixed with 1/4 cup of lime juice.

Sprinkle with sesame seeds and grill on BBQ for 3-4 mins each side
