MMmmm....Just made this off the top off my head...You can add or remove as your heart desires.  This recipe serves 2 (I used to many vege's) so add more if you want to feed a whole family.

3 Sping Onion stalks...Chopped to one centimetre chunks up to the leafy bit.
2 Medium potatoes...Sliced into 1cm thick slices then sliced again into 1cm wide strips.
Handful of Pumpkin...Diced into small cubes, skin off.
One Bunch Of Asparagus....Diced into 1cm chunks.
one to Half a Capsicum...Diced into 1cm chunks.
Cellery sliced into half centimetre chunks. (Dont use the leaves)
Sweet Chilli Sauce to Taste.

1- Boil the pumpkin and potatoe chunks in a pot with approx 2 inches of water until still just very slightly hard.  Drain water. 

2- Put ALL veges including pumpkin and potatoes into a frying pan adding as much sweet chilli sauce as you want.  No need for cooking oil the sauce will do the trick.   I used half a bottle of chilli sauce to create a marinade effect.   (You can use other sauces if you prefer).

3- Stir the veges coating them with the sauce then leave to simmer for 5 to 10 mins....Serve whist still hot.
