I don't know about fancy...but I use one from the Edmond's book which the kids love if you want that?
You could always dress the top with parsley etc?

probly too late.... but

One tin of smoked fish.
one packet of hash browns
half a doz boiled eggs
cheese
milk
flour
butter

Make a white sauce, say a 2 cup of milk white sauce.
chuck in drained can of smoked fish and mix up really well.

put into greased dish, slice up egs and layer on top, throw hash browns on top of that and cover with cheese.

cook for about 40mins at 180.

My other fish pie recipe is for fresh fish

put fresh filleted fish into a greased casserole dish, cover with a pottle of cream, chuck cheese on the top.  Bake at about 150 for 30 mins.  The cream has now turned into a sauce....  mmmmmm.....

I ended up doing something similar

mashed spuds, cheese sauce with the tuna put in, a couple of hard boiled eggs sliced, put it in layers on half the spuds, topped with the left over spuds and some more cheese on top.

was quite loverly actually

Do you know what is really nice is a smoked fish pie?

It may sound weird and a bit ewww but if you like fish pie and the secret ingredient - then trust me as it makes it fab.

Gerkins -not many and finely sliced and diced.

O'k tis very simple

Place butter for a cheese sauce in saucepan and salt and pepper to taste
Lightly saute 1 onion in butter
Then add flour for cheese sauce, when mixed and smooth
add can of smoked fish and a couple of drops of lemon juice
add grated cheese to your own liking.

Once pasta is cooked ( i usually use a vegetale (sp) one) add to fish sauce mix
garnish with more grated cheese and place in oven, i normally bake on 180 for 15 mins the grill to brown topping

Good Luck ... Tastes devine
