Title: KFC Recipe ~ Apparently

KFC ORIGINAL SECRET CHICKEN RECIPE
12 Herbs and spices.


Ingredients
1 whole chicken, cut into pieces
3 beaten eggs
4 tablespoons oil

For the coating

2 cups flour
4 teaspoons paprika
1 teaspoons salt
1 teaspoon pepper
1 teaspoon poultry seasoning (or chicken stock powder)
1 teaspoon oregano
1 teaspoon tarragon
1 teaspoon parsley
1/2 teaspoon thyme
1 teaspoon chives
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon celery salt

Directions:

Sift flour and add together all the coating ingredients and grind finely with a mortar and pestle and place in a clean plastic bag. Coat each chicken piece first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour.

Heat the oil in a skillet. Brown the chicken in oil slowly, uncovered. Once browned, cover the skillet and keeping frying on a very gentle heat until the chicken is fully cooked. Place on paper towels to drain out the excess oil.

almond flour will probably prevent crispiness (not sure about the flaxseed) might be wiser to use rice flour?  :thinking:

ohh, poop, bloody tricky to get a flour that will go crisp in that case, most nut flours tend to go hard/chewy...

I have tried using chestnut flour recently but it burns if the heat is too high, but it might pan-fry quite nicely...  :thinking:

That's why I'm trying Amaranth Flour - still a grain, but less damaging than wheat and other 'pfaffed around with' grains

Will pop it first, so it'll have a bit of a popcorn type flavour

Chicken will be tomorrow - may marinate it in yogurt for 24 hours to ensure utter tenderness

KFC real doesn't go down well with me either makes my tummy do somersaults. Kipling you'll have to put up a revised recipe if all is delicious and easy on the tum.

It's chicken grease. You must know how hard it is to clean that ?
They dredge it all in flour, wheat flour. The flour dust is everywhere, even in the decoders and amplifiers and TV's !!!
Some stores I've seen aren't the best at detailed cleaning, the corners and under things aren't the cleanest. But!
They don't cook in the corners and under the office furniture and the back entry and bin areas.

I would actually be inclined to ask the manager to let you into the back of house to see what the state of the
kitchen is. They have strict controls, but you never know when someone one an hourly rate decides to take a short cut.

But hey!! I'm sure there are more neighbourhood takeaway bars with less than adequate sanitary procedures
in place than any KFC.

yeah, they scrub and wash, but every surface has that feel, and the flour dust gets in everything.

Now for years I ate the stuff and never once got crook, but walking into a kitchen now I feel
less than pristine, but I guess thats because I deal with equipment that isn't the sort of stuff
you can wash and scrub so it accumulates .... things  :eek:

The spice mixture is not the same as KFC, but Daaaaaaaaaaamn it's good

I had enough room to cook both chookies (cut up) on the tray except the wings, so popped those into a pan and cooked them for our lunch.

Oh - and I also marinated the chicken pieces in a combination of yogurt, salt and lemon (juice and rind) over night

The rest of the chicken is currently in the oven slowly cooking - not fried...  but spritzed with a little light olive oil

will serve this with nutty coleslaw, spuds for dems that eats them, or celeriac for dems that don't eat spuds

That chicken was delicious

Served with spuds or celeriac, and a fun coleslaw on the side - Added pumpkin seeds, pine nuts and walnuts (all toasted) and a lemon vinaigrette  - totally Delicious
