I'm gluten free and looking for good recipes for biscuits, breads, pizza bases etc
So far most of the stuff I've bought has been crumbly or tasteless

basco bread mix

 yeahhhhhhhhhhhhh

tastes like bread feels like bread will last 4-5 days. will not crumble for at least 3 days (then good for toast)

i will dig out the choco chip rec

but also if you like cheesecake  you can buy cheese cake filling at the supermarket near the yogurts
just chrush arnotts rice bisc with a little coconut and melted butter for base
and puree and strain berries for the top
i put them in muffin tins and freeze them

pizza base  buy something like organ pizza mix nice and easy
if you live in chch totaly gluten free shop

and also san remo gf pasta is the nicest pasta 


there are a few gf peeps here so just ask if you have any questions

Hey that's cool thanks. Didn't know there were other GF people here. I'm new to it after getting diagnosed with coeliac so i'm still trying to find nice things to eat

i baked some muffins last night. they tasted good but didn't rise much

i haven't seen basco in any of the stores here. I'll have to see if they supply anyone in whangarei

thanks pinky. i love choco chip cookies. i've bought lots but most were horrid, and they cost about $1 or more per cookie

Thanks I'll check new world again and if i have no luck i'll email the distributor.

Have you had improvements in your health with GF? so far I haven't noticed any improvement but fingers crossed it will kick in.

i went from deaths door to virtually symptom free in about 3 weeks.

watch out for "stealth" gluten!  get used to reading labels on everything you buy.

on the ingredients watch out for thickeners (startches), anything in the 1400 number range, if it doesn't say its not from wheat then it probably will be.

don't drink beer, wine and cider, and distilled spirits are fine though.

I was really hoping I'd be symptom free by now but I guess I need to plug on. I've been really cautious with eating things to make sure they don't have gluten but I miss being able to grab chinese takeaways or throw a meal in the microwave

i got the manufacturers list from the coeliac society but i need to subscribe to that mfd to get updates

jammy did you get diagnosed with coeliac?

nope.
had all sorts of tests and cameras up and down they did biopsy but don't know if they tested for
coeliacs.
a lady i was doing a job for found me bent over grimacing and asked what was wrong.
i told her i'd had a 'procedure' a couple of days ago and i'd be ok
she persisted in asking what was wrong with me, so in the mood i was in i thought
bugger ya! i'll tell ya if ya want to know!
so i told her all the gory details 

she didn't bat an eyelid, she just said 'you need to cut out gluten, you must me allergic or  coeliac'

i was ...   eek   wtf??

she took me to the kitchen and started giving me all the GF stuff, and telling me to do this and do that.
so after months of suffering and no answers i thought sod it, why not i'll give it a go.

and within about three weeks i was virtually symptom free

 

but i sure know if i have any gluten now

That's amazing! If you've had a gastroscopy you'd have been checked for coeliac but the tests aren't always reliable. I've been reading Healthier Without Wheat by Stephen Wangan. Very interesting!

I've had symptoms for 30+ years so I guess it will take longer to come right. Also I think I'm sensitive to other foods. I notice foods high in salicylates and amines affect me but cutting them out would leave me hungry. I figure 3 months gluten free and then i take the other foods out

my modified GF Edmonds Banana Cake (best on the day it's made)

Heat oven to 180 and grease and line 2 round (20cm or so) cake tins.

125 g butter (softened)
3/4 cup of sugar (half white caster and half muscovado)
2 eggs
2 cups of mashed banana (ripe and getting brown spots on the skin are best)
2 teaspoons baking powder
2 tablespoons hot milk
2 cups bakels flour (any GF plain flour mix should be fine)
1 1/2 teaspoons baking powder.


- Cream butter and sugar until fluffy and light.
- Add eggs one at a time.
- Add mashed banana and mix.

- Sift flour and baking powder.

- Stir baking soda into hot milk.
- Stir Milk mixture into banana mixture.

- Fold in flour.

Pour into cake tins and then give each tin a few sharp raps on the kitchen bench to get rid of air bubbles.

Cook for 30mins until deep golden brown. (may need a little longer)

Once cool, ice with lemon butter frosting:

100 grams butter softened
2 cups (roughly) icing sugar
zest of 3 lemons
Juice of two lemons (roughly)
1/2 teaspoon of citric acid (for extra sharpness)


If it's a bit liquid, add a bit more icing sugar, the consistency should be light and fluffy and firm.

Mix altogether until light and fluffy, then spread over the top of the cakes and sandwich together.

Bored, you might also like to look into a fodmaps diet. I am sensitive to quite a few foods and cutting them out (or being aware) really helps.
