Just finished icing this, so thought i'd share - please post your slices, cos they are so good for lunchboxes

Weetbix slice

Ingredients:
3 crumbled weetbix
1 cup coconut
4 ozs self raising flour (125gm)
1 desertspoon cocoa
   
4 ozs (125gm) melted butter
1/2 cup sugar
1 teaspoon vanilla

How to Prepare:

    Mix dry ingredients.
    Stir in melted butter and vanilla.
    Press firmly into slice tin and bake in 180 oven 25=35 minutes. While still fairly hot, ice with chocolate icing, cut into squares or rectangles.
    (Sprinkle with coconut if desired)

Oooohhh that's just like the one my mother used to cook but she didn't call it weetbix slice .. was some other name and if you don't have weetbix .. can use cornflakes instead.

I miss my mother's baking.

Yes I've had to rescue a few peices for hubby    .... the kids want me to make more tomorrow ...I guess I'll have to triple the batch

Just popped it in the oven. Didn't get time to do it yesterday  eek

Just wondering if I should've added some sultanas in there as well. Looks yummy!

I love weetbix slice. My mum used to always make it as a kid. Sometimes if we didn't have weetbix, she'd use cornflakes and that was nice too.

100 grams of butter
1/2 of a 400g can of condensed milk
Finely grated orange rind of one orange
1 cup of fine desiccated coconut
1 pkt (250g) wine biscuits (I like super wine)

For the icing :

25 grams (2 Tbsp) of butter
1 cup of icing sugar
about 1 Tbsp of ornage juice

You need a 23cm square tin or there abouts.

Warm the butter in a medium sized pot until melted.
Take butter off the heat, pour in the condensed milk and stir to combine.
Finely grate all the orange rind. Stir it and the coconut in.
Break the biscuits up until they are small crumbs.
Mix the crumbs into the pot.
Press the mixture into the well greased tin. Mixture need not fill the whole tin. Push down well and level the top.
For icing , put soft butter into a bowl. Add the icing sugar and juice. Mix icing then spread smoothly over the base.
You can make wiggles on the icing by dragging a fork across gently.
Chill until firm, then cut into fingers or squares.

Can be frozen.
